Microwaveable Soy Ginger Steamed Fish

Welcome back, students.

Today, I have a high-nutrients meal that can be made exclusively in the microwave. Perfect for those of you who live in a dorm room, but either can’t make it to the dining hall, or simply can’t handle the poor-quality food any more. This meal is a Soy Ginger Steamed Fish.

This recipe is by Kylie Sakaida, a registered dietitian. You can find her on TikTok at @nutritionbykylie. I heavily recommend her content as she is all about making nutrition food easier, which is what we do here at Students Eat Smart.

White Alaskan Cod

The Recipe:

To prepare this meal, begin by adding wild-caught white Alaskan cod to a large microwave safe plate or bowl.  Score the fish with a knife, followed by a generous seasoning of salt. Add thinly sliced ginger along the top of the fish to give it that extra fresh taste. Next, add a tablespoon of soy sauce and sesame oil, followed by a half a tablespoon of mirin. If you don’t have some of these sauces, that is okay. Simply substitute with sauces you already own that are similar in taste. Top the fish with a hefty amount of green onions.

For a vegetable, add Bok choy besides the fish in the bowl. If you cannot find Bok choy at the store, simply forfeit this step and later use a frozen steamable bag of vegetables of your choice. Cover the bowl with a microwave safe lid, or a damp paper towel. Microwave for four minutes, pulling the bok choy out at the halfway mark.

After the fish is complete, microwave a steamable bag of rice, and serve.

You now have a delicious and balanced meal, made in five minutes. Thank you, once again, Kylie Sakaida RD for this amazing dinner idea.

To those of you who try, let me know what you think. Leave me comments, or contact me at the bottom of this page.
